1
Push all of the dry ingredients through a fine sieve into a bowl.
2
Add the soda water or larger to the bowl, gently mix together using a spatula, don’t over mix.
3
Get the oil onto a medium heat.
4
Cut your spam into however many slices you need, one large can yields approx.: 10 slices
5
Dredge the spam slices in the seasoned flour, pat off any excess flour.
6
To ensure a good coat of batter submerge the floured spam slices in the batter mix.
7
Once you oil is hot, somewhere between 140 and 150°C, that’s 280 to 300°F. You can also test the oil hot enough by drizzling a little batter into it.
8
Using a fork, carefully lower the battered spam slices into the hot oil, your fritters should sink at first but quickly start floating in the oil.
9
Your fritters should start floating in the oil, just keep them moving a turning them occasionally, to keep the colour even.
10
The fritters should be fully cooked after 6 or 7 minutes.
11
Carefully lift them out, and onto some kitchen paper to soak up any excess oil.
12
I serve these piping hot, with fried egg, chips/fries and baked beans.
13
Enjoy.
